Travel Tales of Argentina
Argentines are big, and I mean big, fans of asados. Asados are basically barbecues on steroids; lots of people, lots of meat and probably lots to drink! This is an all-day event, where you can’t just pop in for an hour or two. You will arrive early and leave late, with your stomach bursting with happiness (and meat).
And while Argentina recipes aren’t big on spicing up their foods and don’t seem to understand the magic of ketchup, they do have one condiment-related trick up their sleeve. There are very few people who dislike this sauce so common in Argentina, as the taste is tangy and perfect to slather on a steak or choripan.
The chimichurri sauce is a mix of different spices and will be an addition to your barbecue back home that your friends are sure to love. So as summer comes around, get ready to rifle through your Argentina recipes until you find this one!
Small bunch parsley, chopped
½ tsp oregano, fresh or dried
2 garlic cloves
1 shallot, chopped
½ tsp chilli flakes
2 tbsp olive oil
Juice of ½ lemon
2 tsp red wine vinegar
Blend the dry ingredients together in a food processor, or chop very finely by hand. After this, add your olive oil, lemon juice and vinegar to the mixture and blend again to create the saucy texture.
